Easy Warm Vegan Curry

    Cook the forbidden black rice according to the package instructions. For the curry, heat a large wok or cast iron pan over medium heat. When hot, add the gold and sweet potatoes, carrots, and broccoli with a splash of water or broth and cook until soft, about 10 minutes. 2. Add the kale and spices. Cook for 1 minute more. 3. Add the lemongrass essential oil drop(s), tamarind paste or lemon/lime, and coconut aminos. 4. Cook for 1 minute more. 5. Remove from heat. Serve the curry over the forbidden rice and top with chopped fresh basil. 6. Enjoy!
