Cauliflower Rice
Plant-based cauliflower rice from Go Vegan For 30 Days.

01Remove the leaves from the cauliflower and roughly chop into medium-sized chunks. 2. Place the chunks in a food processor with an S-blade and pulse until a rice-like texture is achieved. Do not process too much or it will become mushy. (Alternatively, chop the cauliflower into tiny, fine pieces.) Heat a large skillet over medium heat. Add oil, if using. 3. Once hot, add the cauliflower rice and any seasonings. Stir and cook until lightly brown and soft. (See note for alternate method.) Gently cool and enjoy!
